San Marzano tomato
The San Marzano tomatoes (denomination Pomodoro S. Marzano dell’Agro Sarnese-Nocerino) are used in one of the most appreciated tomato sauces in Italian cuisine, primarily used in pizza.
This tomato variety is medium size, although what makes it unique is its long pear shape, which resembles a pepper. It has nothing to do with the concept we have of round tomato.
The San Marzano tomato perfectly balances a rich sweetness with refreshing acidity. What this means is it’s perfect for preparing tomato preserve. It’s mainly used for pasta and pizza recipes. Similar varieties are also used for these recipes. The greatest thing of all is its lycopene content, an excellent antioxidant, increases when you cook this tomato.
