- 1 pinch of salt
Steps to make the tomato and watermelon soup:
- Prepare all the ingredients and add the tomatoes in boiling water for 5 minutes until the skin comes off.
- Then, let the tomatoes cool and remove the skin. Add the tomatoes, ice cubes and sliced watermelon (without seeds) into the blender and blend until the mixture is homogeneous.
- Rectify with salt to taste. If you want, you can add a pinch of pepper.
- To present this cold soup, add some thin slices of watermelon with a little bit of oregano. If you want, you can also add some croutons, freshly ground black pepper and a bit of olive oil. Enjoy!
Tip: You can marinate all the sliced ingredients (except oil) the night before. The next day you just have to crush everything, let it cool, and it will be ready.
A simple and delicious soup
Despite its simplicity in terms of preparation, the combination of flavours in this meal is truly exquisite. If you want it to be even more refreshing, you can add spearmint or mint, and it works wonders as a starter. It’s also a way to encourage the little ones to eat fruit and vegetables while enjoying the meal.
In addition to being very nutritious, this meal is diuretic due to the amount of water this meal contains.
