The red Perona bean, also known as the ‘Buenos Aires’ bean, is unique and difficult to find, but its quality is excellent. At Agroponiente, we grow this exquisite vegetable every month of the year. This vegetable has an elongated shape, and it stands out because of its dark green and purple spots. However, what’s most peculiar about the Red Perona Bean is that its red colour disappears when it’s cooked.
The Red Perona bean is very fleshy, has no strings and is ideal for stews, rice dishes and any other meal we want to prepare.
Why should we eat this vegetable regularly? Green beans are great antioxidants because they contain high amounts of carotenoids, or in other words, organic pigments with nutritional properties. In addition, they have a high concentration of flavonoids, which prevent oxidation.
As we all know, beans are rich in vitamin C, a natural antioxidant that helps us fight aging, and their high amount of fibre helps regulate intestinal transit. They also improve overall bone health, as they contain calcium and silicon. So, no need to give you more reasons to convince you to include green beans in your diet.
